Irish Dry Stout ## Ingredients ### Fermentables | Name | Amount | |---------------------------------------------- |-------- | | Canada Maltage Malt Pâle Supérieur (parti) | 3 kg | | Maltbroue Seigle Malté (parti) | 800 g | | Maltbroue Cara 40L (parti) | 350 g | | Maltbroue Flocons d'avoine (new) | 800 g | | Fawcetts Roasted Barley (new) | 500 g | | Bestmalz Acidulated Malt (new) | 50 g | ### Hops | Name | Amount | Form | Use | |---------------- |-------- | --------- | ------------- | | Golding | 50 g | Pellet | Boil, 60 mins | ### Yeast | Name | Code | | ---------------------------------------------| --------- | | White Labs California Ale | WPL001 | Substituted for Escarpment Irish Ale, as there was no Irish Ale yeast in stock. ## Notes The roasted barley shouldn't be mashed with all the rest of the malt, but added 10 mins before the end of the mash (to avoid over-astringency and pH issues). 2023-01-13: Really amazing, very very close to a Guinness (even the mouthfeel). Maybe a bit too roasty and too hoppy?
