We had to replace it with Chinook... The color is way too dark for a pale ale (it's closer to a red/brown ale). I would replace the cara 40 by cara 20 or something like that next time. Good overall volume in the carboy, sparging until we get near 5.5-6 gallons is a good idea. Dry-hopped on 2020-11-22. Bottled on 2020-12-06. Opened the first bottle on 2020-12-22. Very good, would brew again the same way.
